Bacon Wrapped Scallops

January 1, 2011

Crispy bacon and tender scallops make for a delectable main course or appetizer.

I LOVE SCALLOPS! They are my favorite seafood and if they are on the menu that’s what I’m ordering. And who doesn’t love bacon? This is a classic combination that never gets old.

Scallops provide healthy doses of vitamin B12, Omega-3 fatty acids, and magnesium.

Here’s how we prepare it.

Bacon Wrapped Scallops

  • 10 sea scallops
  • 5 strips of nitrate free bacon, cut in half to make 10 pieces (If you cannot get bacon from a local farm, we recommend Applegate Farms Sunday Bacon.)
  • Sea salt
  • Freshly ground black pepper

What to do:

Preheat the broiler to high.

Wrap each scallop with a piece of bacon and secure with a toothpick. Place the bacon wrapped scallops on a baking sheet. Season with sea salt and pepper. Watch the salt – the bacon will add a salty flavor to the dish so go lightly.

Place the baking sheet under the broiler for 10-15 minutes or until the bacon is crisp and the scallops are cooked through.

Serve immediately as they taste best when hot and crispy.

Yield 2 meal servings or 5 appetizer servings.
